The Story
Pizza has been a passion of mine for as long as I can remember. For years, I experimented with dough recipes, fermentation techniques, and sauces, always chasing that perfect pizza. What started as a hobby quickly became an obsession with understanding what makes great pizza truly exceptional.

Along the way, I even built a cob oven in my backyard. While it was a fun project and taught me a lot, it was a little too small to produce the kind of pizzas I envisioned. Still, it fueled my curiosity and pushed me to keep experimenting and learning.

At the time, I was guiding students through Capstone projects and often heard the same question: "Why does this matter?" To answer that question for myself, I decided to take on a Capstone project of my own. My challenge was simple: build a pizza business from the ground up.
The first step was investing in a high-temperature pizza oven. The difference was immediate. My pizzas improved dramatically, and I found myself diving deep into the science of pizza making—studying fermentation, hydration, flour selection, and cooking techniques. I became committed to sourcing the highest-quality ingredients and creating an artisan, Neapolitan-inspired pizza that balanced tradition, craftsmanship, and flavor.
To test recipes and gather feedback, I started hosting Wednesday Night Pizza Nights in my backyard. Friends, neighbors, and community members became my taste testers. Week after week, they helped shape the pizzas we serve today.
In 2026, the dream took its next big step forward. I purchased a trailer, outfitted it with a larger oven, and launched my first pizza pop-ups. What began in my driveway—with customers ordering ahead and picking up pizzas fresh from the oven—quickly grew into something bigger.
Today, every pizza we make reflects that journey: years of experimentation, a commitment to quality ingredients, a love of learning, and the belief that great food brings people together. We're grateful to be sharing that passion with our community, one pizza at a time.
